This course was designed to train Messmen of merchant vessels in accordance with the requirements of MLC 2006.
An 80 hour course designed to enhance the knowledge, skills and attitude of Messmen of commercial ships on mess room service and cabin cleaning and on the preparation and production of stocks, sauces, soups, salads, dressing, breads, cakes and other desserts. It also includes competencies such as workplace communication and professionalism, galley and mess hall health and safety procedures, sanitation and hygiene.
- Five days lecture discussion and hands - on mess room service and laundry operation
- Four days actual cooking - international and ship specific specialty recipes
- Uniform, ingredients, manual and recipes will be provided.
